Ingredients
- 1-2 Bottles Red Wine
- Mulled wine spice mix, or 1/2 tsp each of ground cinnamon, cloves, ginger and nutmeg
- 25g (1oz) Sugar
- 1 Orange
- Dried Berries and Star Anise to garnish (optional)

Method
- Put 250ml (1/2 pint) water in a large saucepan.
- Add the sugar, spices, and slices of orange.
- Bring to the boil and stir in the sugar and spices.
- Simmer for 10 minutes. (The spices may not all dissolve - fish out any residue with a sieve)
- Add the wine, then heat to 60C. Simmer for 10 minutes and then maintain at 60C until ready to drink.

- Heat water and other ingredients to boiling
- Cook for 10 minutes
- Add the Wine
- Simmer for 10 minutes
- Wine is ready to serve
- Keep Wine at 60C until ready to use
